The archipelago contains an astounding 17,508 islands. Its estimated population of 255 million is made up of 300 distinct native ethnic groups, who speak 742 different languages and dialects. And one thing is for certain: Indonesia’s position as a fabled coffee origin.
Volcafe’s local subsidiary, PT Volkopi Indonesia, opened its doors nearly 20 years ago and pioneered local farmer training by working with 80 Indonesian coffee farmers. Today, the company has trained and certified more than 2,500 producers. Volkopi’s farmer support staff works directly with farmers to assist them in producing the highest possible quality Arabica coffees and in optimizing productivity.
After hulling their daily harvest, farmers wash the coffee overnight in water. In the morning they begin drying the parchment to 40 percent moisture before passing it on to Volkopi. The company further dries the parchment to 30 percent moisture before hulling it in our field mills. Wet hulling is the most common processing technique in Indonesia, as the high humidity does not allow drying the parchment without negatively impacting the cup. The wet-hulled coffee is sundried to 12 percent moisture and then shipped to the mill in Medan.
The coffee production area in Lintong Nihuta is a high plateau, known for its diversity of tree fern species. Microclimates generated by various small valleys, along with lush, volcanic soil, help to make this area ideal for growing a wide variety of high-end specialty coffees.
Gayo is a region on the hillsides surrounding the town of Takengon and Lake Tawar, at the northern tip of Sumatra, in the Aceh region. Altitudes in this production area average between 1,110 and 1,600 meters, and smallholders grow a variety of coffees under shade trees.
